Braised chicken in plum sauce

PREPARATION & COOKING TIME: 40 MINUTES

NOTE

Oyster sauce, plum sauce and dark soya sauce are sources of sodium.  If you are on a sodium-restricted diet e.g. dialysis, ensure the amount of sauce added is measured to prevent excessive use of these high-sodium sauces.

ingredients

600g                       boneless, skinless chicken breast
10ml (1 tbsp)      cooking oil

30g (5)                  shallots, peeled and blended
30g (5)                  garlic, peeled and blended
8g (1 tbsp)           fresh sand ginger root(cekur), peeled and grated
8g (1 tbsp)           fresh coriander, chopped finely
1g (½ tsp)            five-spice powder
3g (½ tsp)            dark soya sauce
5ml (1 tsp)           oyster sauce
5ml (1 tsp)           plum sauce
Pepper to taste

Coriander, for garnishing

Method

TO PREPARE CHICKEN:
Cut chicken breast into 2cm cubes.

TO COOK:
Heat the oil in a non-stick deep pan.  Fry the blended shallots, garlic, sand ginger, coriander and 5 spice powder until fragrant.
Stir in the chicken pieces, dark soya sauce,oyster sauce, plum sauce.
Add some water if it is too dry.
Leave to simmer until the chicken is tender.

TO SERVE:
Garnish with coriander and serve warm with rice.
