grilled prawns with garlic, chilli and coriander

Picture

ingredients

6 large (450g) prawns with shell
1 clove (10g) garlic
½ (15g) red chili
A small bunch (5g) coriander
1/8 tsp salt
Pepper to taste
6 bamboo skewers

Serves 2
Preparation time: 20 minutes
Cooking time: 3 minutes

Method

Clean the prawns. Make a slit at the side of the prawns to remove the entrails.
Peel and finely chop the garlic.  Finely chop the chilli and coriander.
In a bowl, marinade the prawns with garlic, chilli, coriander, salt and pepper.
Thread the prawns on a bamboo skewer.  This prevents the prawns from shrinking too much during cooking.
Heat the grill until searing hot. Grill the prawns for 2 minutes and serve with the quinoa kerabu and some blanched vegetables..
Choosing grilled prawns instead of a piece of deep-fried chicken saves you calories and fat intake.
