sweet  potato  quinoa  patties

​½ cup cooked quinoa (made from ¼ cup raw quinoa cooked with ½ cup water)
1 cup (150g) sweet potato, steamed and mashed
½ cup (50g) carrots, peeled and grated
½ cup (50g) sweet peas, roughly chopped
½ cup (50g) sweet corn, roughly chopped
½ cup (60g) cheddar cheese, grated
Salt and pepper to taste
These quinoa patties are simple and healthy to make.  This vegetarian patty is a complete protein source because I use quinoa - which has a complete range of essential amino acids.  Improvise by using other vegetables in your patties.

Preparation time: 1 hour 15 minutes
​Cooking time: 30 minutes

​method

To cook the quinoa:  Rinse the quinoa.  Add ¼ cup raw quinoa and ½ cup water into a small pot.  Bring water to boil, and turn the heat down to a simmer for about 20 minutes.  Leave the cooked quinoa to cool.

To prepare the sweet potato: Peel the skin off the sweet potato.  Steam the sweet potato until tender, 20minutes. Leave to cool. Mash flesh with a fork and set aside.


To prepare the vegetables: Peel the carrots and coarsely grate them.  String the sweet peas. Chop them up roughly.  Remove the corn from the cob. Chop the corn up roughly.

To make the patties: Mix together all the ingredients.  Season with salt and pepper.  Use a ring mould to shape the mixture into ½ inch thick patties.  Heat up a grill until hot.  Grill the patties until golden brown.

Serving suggestions: Serve warm on a slice of apple, with rocket leaves and sliced tomatoes.  Top with a little chilli jam for some heat.
